OK... I cant stand it. This is my wife's favorite tartare
Steak Tartare 1 lb Eye of Round steak 1 Tbsp Extra Virgin Olive Oil 1 egg yolk 1/8 tsp dry mustard 2 Tbsp Worcestershire 1 bunch scallions fine slice 2 Tbsp mild rice vinegar 1/3 cup chives 1 Tbsp celery seed Salt to taste Pepper to taste
Pound the eye of round with a mallet or the heel of the hand to transparent. Slice into 1/4” strips. Reverse cut with heavy French chef’s knife and mince fine. Recut twice to reduce meat to very small pieces.
Spread into thin patty and wrap airtight with plastic wrap. Chill for 30 minutes.
Serve with toasted hard rolls or Melba toast, sliced hard boiled eggs, capers and minced red onions.

if only his ass was booted out. he'd sue his wife for abusing the handicapped and evicting without proper notice. dianne you're starving me. i'm gonna have to stop watching your cooking videos. i end up raiding the kitchen just to find i havn't got what i need to fix what you do. i'll have to make a list and prepare to whip up one of your meals. it's hard to keep fresh meat and seafood on hand. find it, buy it, fix it and eat it within hours. mine wouldn't make it to the frig either. got room in the bunk house ?
