Great Idea on the freezer clean out...
Brandied Venison Medallions with Blackberries

INGREDIENTSServes Six

12 (4-ounce) filet medallions (one backstrap) approximately 1 thick
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoon unsalted butter
4 tablespoons minced shallots
2 teaspoon minced garlic
2 cups sliced white mushroom caps
1/2 cup Cognac or brandy
1/2 teaspoon Dijon mustard
1/2 cup heavy cream
1/2 cup reduced veal stock, recipe follows
1 cup canned Blackberries
4 Tbsp Blackberry Jam
2 tablespoon finely chopped green onions
2 tablespoon minced parsley leaves

DIRECTIONS

Season the venison medallions on both sides with the salt and pepper.

Over low heat warm the blackberry jam. Add of the drained canned blackberries. Bring heat up to high simmer and add 1 jigger brandy. Tilt pan away and ignite. Continue to stir while the brandy flames out. Reduce heat to warm.

Melt the butter in a large skillet over medium-high heat. Add the meat and cook for 3 minutes on the first side. Turn and cook for 2 minutes on the second side. Add the shallots and garlic to the side of the pan and cook, stirring, for 1 minute. Place the meat on a plate and cover to keep warm.

Tilt the pan towards you and add the brandy. Tip the pan away from yourself and ignite the brandy with a match.

When the flame has burned out, add mustard and cream. Mix thoroughly and cook, stirring, for up to 1 minute. Add the remaining Blackberries and half the juice. Simmer for 1 minute. Add the mushroom slices and stir to combine. Continue to simmer for 2-3 minutes until thickened. Return the meat to the pan and turn the meat to coat with the sauce.

Remove from the heat and stir in the green onions and parsley reserving a tablespoon of parsley for plating accent.

Arrange medallions, mushrooms, and sauce on serving plates. Combine any additional meat juices from resting pan with blackberry sauce. Serve as a side to be spooned over medallions by guests. Sprinkle with parsley garnish and serve immediately.

An friend sent this. This photo is famous one, He loved and respected Seabees "John Wayne" and him were good friends in fact he almost got the role in Fighting Seabees. A little fact in everyone of "John Wayne" movies that involved the Military in operations after WW II he mentioned or someone mentioned them in the Movie. Anyway this was taken at his ranch where he was made an honorary Seabee. We have Detachments at all POUTUS locations specifically Camp David, they do maintenance and act as secondary Security Force. Yes Force Protection is our job.
