Hogs and bears really don't mess with it and when it gets wet instantly turns to mush so keeps throwing out scent and keeps the deer checking weeks after I'm not there. Happy Smoking ya big Turkey, I see ya limping hey I’m still fighting respiratory shit Oh yeah.
A real smokehouse — brick, block, or wooden with an offset firebox — gives turkey the deepest, most authentic smoke flavor you’ll ever taste. Oak delivers a strong, classic barbecue smoke; pecan is milder, sweeter, and nutty — the traditional Southern choice for poultry. Use whichever you prefer or mix them.This recipe is for a 12–15 lb fresh or fully thawed turkey (not pre-brined or “enhanced”).
Total time: 3½–6½ hours depending on your smokehouse temperature.
Always cook to temperature, never time.Final Internal Temperatures (USDA safe)Breast: 165 °F (pull at 160–162 °F for carry-over)
Thigh: 175 °F
Step 1: Brine the Turkey (Do NOT skip this step)Lean turkey dries out easily in a smokehouse. Brining is insurance.Easy Wet Brine (12–24 hours)2 gallons cold water
1 cup kosher salt (Diamond Crystal or Morton’s kosher — NOT table salt)
½ cup brown sugar
2 oranges, quartered
1 onion, quartered
6 garlic cloves, smashed
2 bay leaves
1 tbsp black peppercorns
Optional: 1 cup apple cider (pairs great with pecan)
Dissolve salt and sugar in 1 gallon hot water with the aromatics. Add the second gallon cold water (or ice water). Submerge turkey breast-down in a brining bag or food-grade bucket. Keep below 40 °F overnight.
Next day: rinse thoroughly inside and out, pat bone-dry, and air-dry uncovered in the fridge 8–24 hours (this gives incredible crispy, mahogany skin).(Dry-brine alternative: rub ½–¾ cup kosher salt + herbs under and on skin, refrigerate uncovered 24–48 hours.)Step 2: Prep the BirdBring turkey to room temperature (about 1 hour).
Spatchcock (recommended for smokehouse): remove backbone with shears, flatten the bird. Cooks faster, more even smoke penetration.
OR keep whole and truss tightly.
Loosen skin and rub herb butter or oil underneath and on top.
Simple seasoning: kosher salt, black pepper, garlic powder, paprika.
Stuff cavity loosely with apple quarters, onion, and rosemary (aromatics only — remove before carving).
Step 3: Firebox & WoodStart with seasoned hardwood kindling to build a coal bed.
Once you have glowing coals, add oak or pecan splits (4–8 inch diameter).
Goal: clean, thin blue smoke coming out the chimney. Thick white or black smoke = bitter creosote.
Add 1–2 splits every 45–60 minutes as needed. You do NOT need heavy smoke the entire cook — first 2–3 hours is when most flavor is absorbed.
Step 4: Preheat the SmokehouseClose dampers halfway and let heat build slowly.
Target range: 275–325 °F measured at bird level. Many old smokehouses naturally settle around 250–280 °F — that’s fine, just plan on longer cook.
Hang an oven thermometer inside if you don’t have a fixed gauge.
Step 5: Hang or Rack the TurkeyTraditional smokehouse method: hang it. Run stainless S-hooks or butcher’s twine through the drumsticks or through the body (if spatchcocked, hang by the legs or wings).
Hanging gives 360° smoke circulation and the classic teardrop shape.
If you can’t hang, lay breast-up on oiled racks.
Step 6: Smoke ItPlace/hang turkey in the smokehouse once thin blue smoke and temperature are stable.
Insert a good probe thermometer in the thickest part of the breast (not touching bone).
Maintain thin blue smoke and 250–325 °F the whole time.
Optional: place a pan of apple juice or water on a lower rack for humidity.
No need to mop constantly — smokehouse humidity is usually high enough.
Approximate times (12–15 lb bird):250–275 °F �' 5–6½ hours
275–300 °F �' 4½–5½ hours
300–325 °F �' 3½–4½ hours
When skin is deep mahogany and breast hits 160–162 °F, pull it.Step 7: RestRemove from smokehouse, tent loosely with foil, rest at least 45 minutes (60 is better).
Smoke flavor intensifies during the rest.
Step 8: Carve & ServeSlice breast meat against the grain, separate thighs and drumsticks. Make gravy from the drippings if you used a drip pan.Smokehouse Pro TipsFirst smoke of the season? Run a hot “cleaning fire” the day before to burn off dust and mold.
Pecan burns cleaner and sweeter — many old-timers use nothing else on birds. 

 
If your smokehouse runs cold (<225 °F), you’ll have to finish in the oven — not true smokehouse style. 

Spatchcocked birds finish 30–60 minutes faster and get more bark.Done correctly in a real smokehouse with oak or pecan, this will be the best turkey you or anyone at your table has ever eaten — full smoke ring, juicy meat, and that unmistakable old-school flavor. Happy smoking!
