Dumplings are different all over the UK too. Some are made to float on the juice or gravy and some are sinkers, ending up on the bottom of the bowl.
As with many of these things, the idea was often to stretch out and make a meal filling for a family who didnt have the money to buy extra meat or veg. My family are from coal mining stock, were families were large and mostly poor. My dad remembers meals of bread and dripping, the largest and most nutritious part of the meal going to his father who spent long arduos hours under ground and depending on the coal seam many miles out under the Irish sea.

I love seeing the various recipes Diane posts on facebook, many are variations on those i recognise as coming from those eras where many working families had little acces to natural ingredients or expensive ingredients.
