I have the ButterBall Pro Turkey fryer, but it's such a giant pain the in ass to get rid of the oil. It's way easier and more consistent than the propane fryer. You still have to deal with the oil. And at $50 for three gallons? Fuck that.
Guys talk about recycling the oil, filtering it back into the jugs, using it to fuel their diesel cars and trucks. That's all horseshit. I'm too old and impatient to be jacking with all of that.

Pellet smoker, spatchcocked, creole butter, and seasonings!
Run it at 425 for 45 minutes, drop it to 350 till that breast hits 155 degrees and pull it out and cut it about 30 minutes later.
I usually let it rest in a cooler (same cooler I use to brine it after I clean it out).

I do spicy on one side of the bird (slap ya mama/spicy creole) and I do chicken shit seasoning and apple whiskey seasonings on the other side. I shove some lemon slices between the skin and the breast.

You can't freaking beat it. 90 Minutes for a 19.5 pound bird with crispy skin.

For Christmas I smoke a brisket in the offset smoker using hickory.

The deer my grandson calls "Big Wiener" that we hunted unsuccessfully last evening. The buck has a hernia that will sometimes correct itself, but it doesn't slow them down. Phoenix lasted a strong 40 minutes before he asked to go home. We'll try it again soon...
