Diane, there's a secrete to Shucking Oysters. !. There is a flat side ( Top) and a Round side (Bottom)
2. Hold the round side down in the palm of your hand with the pointy end towards you and insert the shucking knife about a quarter-inch into the Oyster and twist and insert knife along the top side.
3. Always use an Oyster shucking knife ONLY (otherwise the blade might break)
4. Always use an Oyster shucking Glove ALWAYS!!! They sell them in most Seafood Shops and it will save you a trip to the E.R.
The best Eastern shore Oysters come from the Bayside. ( Saltier and Sweeter plus you'll get a little Blue Crab inside some times / which I'm sure you already know about)

Flashback--one on the best meals I've ever had--a duck hunting buddy of mine and I shot a few mallards and on the way back from the blind we picked some spinach from a field and shoved it in our waders--got back to his house, breasted the ducks, wrapped them in bacon, slow cooked them over charcoal and served them rare. His wife had made fresh apple sauce that day--had that with the duck and a spinach salad and washed it down with real Tuborg beer (from Denmark)--fantastic.
