Ghost and Booze in the kitchen

Ingredients

20-24 Lemons (depending on size)
1.5l 100 proof vodka
3 Cups Sugar
4 Cups Water

Instructions

Grate the rind off of the lemons using a fine grater - be careful not to get any of the bitter white pith.

Add the rind to the vodka in a large container.

Seal container the leave for 1 - 2 weeks (I swirl it around every few days)

After 1 - 2 weeks

Use a cheesecloth filter to strain the rind from the vodka

Bring the sugar and water to heat until the sugar has completely melted

Mix the sugar water into the vodka, and bottle when cooled.

Recipe makes approx 4x750cl bottles.
